Sixteen’s Seasonal Menu: The Summer Market

 

CHICAGO – June 26, 2013 – Sixteen – the Michelin rated, Five-Star restaurant at Trump International Hotel & Tower® Chicago – takes guests on an exploration of the farmer’s market with a new, seasonal menu. Featuring modern American cuisine, Sixteen’s Executive Chef Thomas Lents and Executive Pastry Chef Patrick Fahy introduce The Summer Market.

 

With menu options of 12-courses, 8-courses, 4-courses and a la carte, the elevated dining experience evokes cherished summer memories and celebrates ingredients sourced from local farmer’s markets and others from across the country. Produce at the peak of freshness is showcased through novel intrepretations of favorite summer cocktails and dishes.

 

For the season, the sights, smells and flavors of the farmer’s market are brought to the sixteenth floor dining room and shared with guests in numerous modes, starting with a table-side presentation of a bountiful display of produce. A visual representation of the menu, the produce is arranged by dish for diners to select course options and preview forthcoming dishes. The display is accompanied by a plank of wood with a list of ingredients and providers etched by hand. 

 

Indicative of the following courses and Chef Lents’ focus on highlighting favorite summer fare, the meal begins with three snacks of traditional summertime cocktails reinterpretated with new textures and deconstructed presentations. A pimms cup becomes a liquid candy with pimms gelle and cucumber cup; a gin and tonic features gin and lime granita, juniper sorbet and a table side tonic pour; while a sangria gelle is served inside an orange with frozen berry segments and poppy foam. The theme of farming is weaved throughout the menu, with edible soil, a living salad, and wild flowers. Like the resourceful farmer, dishes also feature the utilization of every element of an ingredient, including a dish with popped corn, roasted corn, and a corn broth and a soy bean dish with tofu skin, egg tofu, and edamame.

 

Interactive table-side presentations and a focus on the dialogue between the guest and the kitchen remain at the forefront.  Tabletop charcoal grills, a potted salad misted with nasturtium perfume, communal soft shell crab boil, and other tableside displays captivate the guests and enriches the fine dining experience.

 

The cost for the menus are $110 for four-courses, $150 for eight-courses, and $210 for twelve-courses. Wine pairings may be added for an additional $45 for four-courses, $75 for eight-courses and $105 for twelve-course. An a la carte menu is also available. All prices are exclusive of tax and gratuity.

whole roasted loup de mer, red pepper octopus fume, bloomsdale spinach and saffron rouille

 

Eggplant/Porcini/Charred Beef

wagyu ribeye “coal,” eggplant caviar, porcini conserva and arugula

 

Corn/Jalapeno/Heritage Pork

corn agnolotti, jalapeno, smoked pork cheek, citronelle popcorn brodo

 

Meals will culminate with exquisite dessert creations from Chef Fahy, including:

 

Assorted apricots with amaretto pain perdu, Werp Farm nasturtium flowers, apricot kernel ice cream

 

Nichols Farm strawberries, celery, lovage, mascarpone ice cream

 

Chocolate gateau, espelette yogurt, Green Acres Farm sugar beet ice cream
